Brás-style Cod

Its origin is reportedly due to an innkeeper of Lisbon, named Braz (or Brás), who mixed shredded cod, fries and scrambled eggs.


400 g dried salt cod
3 table sp. olive oil
500 g potatoes
6 eggs
3 onions
1 clove garlic
fresh parsley
black olives

. Soak the codfish, changing the water 2 or 3 times to remove the salt. Scald in boiling water and drain. Strip fish in small pieces discarding any bones.
. Fry the potatoes in small batches in hot oil till golden brown.
. In a large fry pan heat the olive oil add the onions sliced thinly and fry for 3 min then add the garlic, the codfish shreds, add the potatoes giving a quick stir, than add the egg mix stirring. Season to taste, adding salt and pepper.
. Sprinkle the dish with chopped parsley and garnish with black olives.
