Codfish Fritters

This specialty is one of the great success recipes of Portuguese cuisine.
The codfish fritters can be served as an appetizer, a starter or as a main dish, accompanied by rice or various salads.

600 g  dried salt cod
4 eggs
50 g wheat flour
1 onion

. Soak the cod, changing the water 2 or 3 times to remove the salt. Scald in boiling water and drain. Strip fish in small pieces discarding any bones.
. Make the batter by adding the eggs with the flour until smooth, if necessary, add a little water in which the cod has been boiled.
. Add cod, onion and chopped parsley, season to taste and wrap well.
. With the help of a spoon remove portions this mixture and fry in hot oil, on both sides, until golden brown.
