Fava-Rica (Dried broad bean Soup)

Until the early twentieth century this soup was sold on the streets of Lisbon, by women crying out loudly: "Fava Riiiiiica!"(meaning “anyone for fava-rica?”).
Fava-rica soup was much appreciated by the popular classes. Due to its high protein content, It was a very nutritious food.
The fava-rica culinary term refers to «dried broad bean, which, when cooked, is braised with olive oil, garlic and pepper»(Dictionary of the Portuguese Language, Academy of Sciences of Lisbon).

500 g dried broad beans
4 table sp. olive oil
4 cloves garlic
1 table sp vinegar

. Soak the beans in cold water overnight.
. Drain and place the beans in a pot with salted water and bring it to the boil. Cook over low heat until very soft.
. Add the olive oil, the minced garlic and the vinegar.
. Season to taste with,salt and pepper. Serve hot.
